Contact Dr. Ron Pegg

Dr. Ron Pegg was part of a UGA-CAES “Teaching Locally, Engaging Globally,” Faculty Learning Community in Costa Rica, June 8-20, 2010, which is part of a USDA-CSREES Higher Education Challenge Grant (2009-2012). During the 2010 visit to Costa Rica, the faculty visited a number of agricultural operations throughout the country including an organic coffee farm. An output from the visit is a reusable learning object (RLO) on coffee processing in Costa Rica; Ron will be using this in his First Year Odyssey course on Coffee Technology in the Spring of 2012.  Ron Pegg does not speak Spanish, but knows a few important words/phrases in the language.

Description of Research Interests

Functional foods and nutraceuticals; bioactive properties of phytochemicals; separation and identification of bioactives; shelf-life extension strategies; meat science; development of analytical assays for foods.
